Summary/Objective

The production/Inventory manager position is responsible for creating the production schedule and procurement of all raw materials for both ingredients and packaging.

  1. Communicate with Sales/Marketing Department to develop demand forecasting.
  2. Use Sales forecasting and brand plan to develop monthly production schedules for both brewing and packaging.
  3. Enter production schedule into enterprise software, Orchestrated Beer.
  4. Order materials for brewery production and packaging.
  5. Negotiate purchasing contracts for ingredients and packaging materials.
  6. Work with warehouse personnel to ensure material inventory level is optimal and accurate.
  7. Work with Accounting to develop and maintain cost models.
  8. Create and manage production budget.
  9. Monitors production for TTB compliance and reporting.
  10. Find opportunities to improve processes and profitability.

Full Time Custodian

Job Summary:

The Custodian for Dust Bowl Brewing Co. will be responsible for the day-to-day cleanliness and sanitary environment of our restaurant and facilities. The Custodian will ensure that the facility is cleaned to the highest standards with emphasis on employee hall, dry storage, utility room, kitchen maintenance, etc. Applicant will also take care of necessary additional cleaning in upstairs business offices and windows.

SUMMARY OF POSITION 

The Food Expo is responsible for ensuring Dust Bowl’s standards for quality to all finished dishes, meal portions, and presentation.  Organizing delivery of meals to guests by delegating tags and orders between FOH and BOH.  Communicating with servers and line cooks regarding dish priorities, kitchen synchronization and ticket times.

ESSENTIAL JOB FUNCTIONS

  • Set up, prep, stock, rotate and re-stock stations for opening service
  • Prepare a variety of foods according to prep lists, delegate by priority

Wash and clean tableware, pots, pans and any and all cooking equipment. Keep the dish room and equipment clean and organized.

Summary/Objective

This candidate will be part of a winning team!  The Line Cook will be responsible for accurately and efficiently cook meats, fish, vegetables, soups, and other hot food products, as well as prepare and portion food products prior to cooking; perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

Reports to Lead Brewer and Brew master

Summary/Objective

Responsible for all aspects of wort, green beer, dry hopped, fruited and brite beer production, as well as assisting in packaging operations at both the 10 and 60 bbl brew house locations. The position will also be required to clean all tanks and equipment, as well as assist in warehouse operations and possibly drive company provided vehicles.

Essential Job Functions

1. Receiving, inventory and store raw materials and product (Verification of condition/quantity).

2. Operate 10 and 60bbl brew house for wort production.

3. Dry hop (both automated and manual) and fruit beers in fermenters.

4. Operate filter and centrifuge for beer clarification.
5. Sample tanks for gravity, pH, CO2/DO levels, yeast cell counts and document all actions taken or changes occurring with a beer. Harvest and handle yeast.

6. Package beer in bottle, can, and keg format.

7. CIP and manual cleaning of all tanks and equipment. Perform periodic maintenance to assist Maintenance Manager.

8. Troubleshoot equipment problems.

9. Develop and evaluate beers with assistance of Quality Assurance and Brew master.

10. As needed, prepare reports and summaries for the staff related to the aforementioned activities.
